Dried ginger is a concentrated, earthy, and pungent spice made by dehydrating and often grinding the underground stem (rhizome) of the Zingiber officinale plant. It tastes deeper, warmer, and less juicy than fresh ginger. Drying transforms the active compound gingerol into shogaol, making dried ginger roughly twice as pungent and giving it a lingering, spreading heat.
